4 Hour(s) Credit
Why do spicy foods originate in hotter climates? How did global trade bring spices, exotic nuts and fruits as well as new flavors to the New World? Technology innovations such as the refrigerator, flash freezing and plastic re-invented the way we store, access and use food. America’s complex and changing food traditions bring new cultural traditions and new foods through waves of immigration. Learn about agricultural regions, food-ways, diverse cultural traditions of food, short and long-term food security, food pathways, distribution networks, food culture, and the power of food.
